Fried Dandelions

It would never have occurred to me to go out into the yard and fry up some dandelions.

Fried Dandelion Flowers

• Rinse your dandelion flowers and gently pat dry using some kitchen paper.
• Place a frying pan over a medium heat and, when hot, add a thin layer of oil to the pan.
• Mix the polenta with the salt, black pepper, dried thyme and dried oregano.
• Dip the flowers first in the beaten egg and then in the seasoned polenta.
• Fry in batches, stalk side up, for around 3 minutes or until golden. Remove and drain on kitchen paper.
• Eat as a snack or use to surprise, and maybe even delight, unsuspecting family and friends.

Dandelion leaves are good in salad, although they have to be young, or else they're bitter. I believe the roots are edible, too.

I never have to pick dandelions from my lawn because the in-laws harvest them all for food.

Thanks for the Eull Gibbons link. I always thought he was 100 year old, but the guy was only 64 when he died, of a congenital disorder.

I never liked dandelion and burdock as a drink, so I doubt I'll be trying this recipe out.

I did not like dandelion wine, so like dumbledoor, I doubt I'd like this either. Interesting though.

dumbledoor, patty, it may interest you to know that the French for dandelion is pisse-en-lit - pee in the bed - because they look like a pee stain in a mattress.

Interesting, since dandelion is itself French in origin -- "dent-de-lion" ("tooth of the lion"). Wonder who felt the need to name a cute little wildflower after an excretory accident?

That sounds delicious. We have a field next to our house and the Dandelions just flourish! We made tea earlier this year but I never thought to fry the flowers.
