What a great idea! There should be one per town, and each of them should sing a little song to make the public know the pub is there, like ice cream trucks.

You could have a fleet -- Irish Pub, English Pub, Old West Saloon, 1930s Speakeasy, Star Wars Cantina, etc.

Might be a bit labor intensive. Where I grew up, they used to lend you a tap when you bought a keg. Then it had to be a separate rental due to health regulations concerning cleaning/disinfecting. Then it became a 'buy your own' situation because the paperwork/tracing/cleaning became too expensive for liquor stores to bother with.

Considering what people get up to in bars, and factoring in that these would be very private, I wouldn't be comfortable if they just vacuumed and gave everything a fast wipedown. Complete disinfecting and sterilization of the entire interior would be the minimum. YMMV

@Richard Bos -- They're renting the 'room' and equipment. You have to supply the beer/booze/sherries for your party.

Well, I wouldn't be comfortable about those little jacks holding up to the sheenanigans of a bunch of drunken Irish pub rowdies.
