In Belgium, they call it "water rabbit", and as a Dutchman I salute them for it. I've never had the opportunity to try it, but I wouldn't hesitate one second. And even though Iam a culinary adventurer, that particular experiment wouldn't even be because of the dish (though that would be a bonus) - no, it would be because it would mean one less mass-murderer. As an inhabitant of the polders, relying on the dikes as I do, this is one invasive species we do not need. The more of them are eaten, the better. Just give me one. I bet I can make a proper curry out of it.
